Where it comes from
Chocolate eclairs of this kind are a British sweet of the mid twentieth century, made by Cadbury and others, and sold loose and in bags for decades. The name borrows from the French pastry, which they resemble only in having a filling.
What it's made of
Glucose syrup, sugar and condensed milk boiled to a chewy toffee, then extruded as a rope around a chocolate centre and cut, so each piece seals itself.
