Where it comes from
Fruit jellies are among the oldest confections in Europe, descended from fruit pastes and pâtes de fruits made in France since the Middle Ages by cooking fruit with sugar until it set. The modern version uses pectin, the same setting agent that makes jam work.
What it's made of
Sugar, glucose syrup and water set with pectin, with lactic acid and sodium lactate, coloured with anthocyanins, curcumin and paprika extract.
