Where it comes from
Puffed and aerated sweets come from extrusion technology borrowed from the breakfast cereal industry, where heating a starch mixture under pressure and releasing it causes it to expand. Confectioners adopted it to make sweets that feel substantial while weighing almost nothing.
What it's made of
Sugar, corn syrup and hydrogenated palm kernel oil sweets in a coloured shell, frozen and dried under vacuum so the shell splits and the centre puffs.
