Where it comes from
Sherbet arrived in Britain from the Middle East, where sharbat was a sweet cooled drink, and Victorian confectioners turned it into a fizzing powder. Filling boiled sweets with it became one of the defining techniques of the British sweet shop.
What it's made of
Sugar, glucose syrup and citric acid boiled and formed around sherbet centres of sugar and bicarbonate of soda, in several flavours.
