Where it comes from
Fruit drops are the basic form of the boiled sweet, made in Britain since the early nineteenth century once refined sugar became cheap. They were sold in tins for travel and in jars for the sweet shop, and the clarity was a mark of quality because a badly boiled sweet goes cloudy.
What it's made of
Sugar and glucose syrup boiled to around 150 degrees, coloured and flavoured, then cut and dusted. Cloudiness is a fault, caused by sugar crystallising, so a clear drop means it was boiled properly.
