Where it comes from
Salt water taffy comes from Atlantic City in the 1880s, where the story goes that a sweet stall was flooded by a storm and the owner joked that his taffy was now salt water taffy. The name stuck, though there is very little salt and no sea water in it. Taffy Town in Utah is one of the last large makers using the traditional pulling method.
What it's made of
Corn syrup, sugar and coconut oil with sea salt, egg whites and evaporated milk, cooked, then pulled on a machine to work air into it, which is what makes it light rather than dense.
