Where it comes from
Salted caramel arrived from Brittany in the 1970s and took decades to become mainstream. When it did, in the 2000s, it swept through every category from chocolate to ice cream, and fudge was one of the first traditional British sweets to adopt it. It is now often the best selling fudge flavour, ahead of vanilla.
What it's made of
A fudge made on a soya drink base with sugar, glucose and hydrogenated palm kernel oil, with caramel flavouring and salt. No milk in the recipe.
