Where it comes from
Marshmallow began as a genuine medicine, made from the root of the marsh mallow plant, used in ancient Egypt and still used by French confectioners in the nineteenth century as pâte de guimauve for sore throats. The plant was replaced by gelatine in the late 1800s, and the modern marshmallow is what remained.
What it's made of
Sugar and glucose fructose syrup whipped with pork and beef gelatine and air until it holds, then moulded into stars and dusted with maize starch.
