Where it comes from
Lemonheads were created in Chicago in 1962 by Nello Ferrara, of the Ferrara Pan Candy Company, who named them after his newborn son whose head the family joked was lemon shaped. They are made by the cold panning method, which the company had used since the 1900s.
What it's made of
A soft centre is tumbled in a rotating pan while sugar syrup and lemon flavour are added in layers, building the shell. They are then polished with wax and confectioner's glaze.
