Where it comes from
Foam shrimps have been a British penny sweet since the mid twentieth century, made with the same aerated sugar and gelatine mix as foam bananas. The shape has no connection to the flavour, it was simply one of a set of novelty moulds that were cheap to produce and easy for a child to recognise.
What it's made of
Sugar and glucose syrup whipped with pork gelatine and air, coloured pink with beetroot red, moulded and set.
