Where it comes from
The jawbreaker is the American cousin of the British gobstopper, made by the same panning method but often larger and with a gum centre. It became a fixture of American penny counters in the twentieth century and arrived in Britain through imports.
What it's made of
A gum base centre panned with layer after layer of flavoured sugar syrup over hours, coloured with brilliant blue and black carrot.
