Blue raspberry is an American invention of the 1950s created to avoid a colour clash with cherry, and it has become one of the defining flavours of the extreme sour category because the colour signals intensity before anything is tasted.
What it's made of
Glucose syrup, sugar and dextrose with modified maize starch and hydrogenated vegetable fat, hydrolysed soya protein, coated in acid and coloured with brilliant blue.
