Where it comes from
Barley sugar is one of the oldest sweets in Europe, made in France from the seventeenth century by boiling sugar with barley water. The sugar free version keeps the flavour and the shape and replaces the sugar with isomalt, which behaves similarly enough to hold the same twist.
What it's made of
Isomalt and sucralose boiled hard with natural flavouring and paprika extract for the amber colour.
