Where it comes from
Sherbet lemons are one of the great Victorian sweet shop inventions, combining a hard lemon shell with a fizzing centre. Making a sugar free version is technically difficult, because the sherbet depends on an acid and bicarbonate reaction that sweeteners can interfere with.
What it's made of
Isomalt and sucralose with vegetable fat, citric acid, sodium bicarbonate and lemon flavouring, coloured with tartrazine.
