A clear amber hard sweet, usually twisted, with a gentle caramel and lemon flavour. Softer and rounder than most boiled sweets and famously good for travel sickness.

Where it comes from
Barley sugar is one of the oldest sweets in Europe, made in France from the seventeenth century by boiling sugar with barley water, which gave it the name and a slightly cloudy amber colour. It came to Britain and became the standard travel sweet, sold in tins and kept in the glovebox for generations.
What it's made of
Sugar and glucose syrup boiled to a hard crack with lemon oil for flavour. Most modern versions no longer contain barley at all, only the name survives.
