Eton mess is what happens when a pavlova collapses and everyone decides they prefer it that way. Bubbly Eton Mess Fudge is the same happy accident: soft strawberry fudge with pieces of real meringue through it, a white chocolate coating on top and a light sparkling wine flavour underneath.
The Fudge Factory make it on their soya base, but the meringue is egg white and the coating contains milk, so both are on the label. The bubbly is a flavouring, so no alcohol, and it's fine for children, though wasted on them.
Put it with Strawberry & Cream Fudge and Strawberry Cheesecake Fudge in a summer pudding box. Hen dos, wedding favours, late June.
