Where it comes from
White chocolate was first made commercially in Switzerland in the 1930s, reputedly as a way of using surplus milk powder. It took decades to be accepted in Britain, and even now the legal definition requires cocoa butter, milk solids and sugar, which many white confections do not meet.
What it's made of
A compound coating of sugar, vegetable fat, whey powder and wheat flour deposited as drops onto a cooled belt.
