What it is
A soft apple flavoured gum, moulded as an apple or a slice, coated in a heavy sour sugar. The sourness lands straight away and fades into a sweet green apple flavour, which is what makes them so easy to keep eating.

Where it comes from
Sour sweets as a category are a modern idea. Until the 1970s most sweets aimed at sweetness alone, then American makers found that children would buy anything that made their friends pull a face. Sour apple became the flagship flavour because green reads as sour before you have even tasted it. British pick and mix picked it up in the 1990s and sour apple is now one of the highest selling flavours in the category.
What it's made of
A chewy base of glucose syrup, sugar and starch, flavoured with green apple, then coated in sugar mixed with citric, malic and sometimes tartaric acid. Malic acid is the one that gives it the slow building sour, because it is the acid found naturally in real apples.
