Where it comes from
Peppermint creams are a British sweet that sits between confectionery and home cooking, since generations of children made them at school and at home with icing sugar, egg white and peppermint essence. The commercially made version with dark chocolate became the standard after dinner mint, sold in boxes and loose.
What it's made of
Sugar and glucose syrup worked into a smooth fondant with egg albumen, flavoured with natural peppermint oil, cut into discs and coated with dark chocolate at 58% minimum cocoa solids.
