What it is
American hard fruit candy, freeze dried until it puffs into light, porous nuggets that crunch and melt.
Taste
Where it comes from
Irregular hard pieces are made by breaking a sheet of boiled or compressed sugar rather than moulding it, which is the cheapest possible production method and gives a natural looking randomness that moulded sweets cannot.
What it's made of
Corn syrup and sugar with malic acid, flavourings, soya lecithin and colours, frozen and dried under vacuum so the candy puffs up.
