Where it comes from
The freeze dried sweet category emerged in the 2020s from small American producers and spread to Britain within a year. It is one of the few genuinely new confectionery categories to appear in decades, and it was created by customers rather than manufacturers.
What it's made of
Fruit chews of sugar, glucose syrup and fruit juices, frozen then dried under vacuum so the water sublimates and the sweet expands.
