Cranberry sauce is the only part of Christmas dinner that's allowed to be sweet, so we ran with it. White Choc Cranberry Ripple Fudge is a pale, soft, white chocolate flavoured fudge with a red cranberry ripple and whole dried cranberries dotted through it, each a chewy, slightly sharp burst.
The Fudge Factory make it on their soya base with no milk in the recipe. The white chocolate is a flavouring rather than a coating, so it stays soft, and the cranberries are real fruit dried with cane sugar.
It belongs in a Christmas tin with Mince Pie Fudge and Gingerbread Latte Fudge. A decent teacher present, if it gets there.
