Scottish Tablet is what happens when Scotland decides fudge isn't sweet enough. It's made by boiling sugar, condensed milk and butter until it sets firm and grainy, and the result is a sweet that snaps rather than bends, then melts into a rich, buttery, sugary crumble on the tongue. It is not subtle and it is not supposed to be.
This one comes from Ross's of Edinburgh, who have been making Scottish sweets for well over a century. The texture is the giveaway of a good tablet: fine grained and dry to the touch, never sticky, with the caramelised milk flavour that only comes from a proper boil.
Pair it with Edinburgh Rock for a Scottish double, or with Clotted Cream Fudge and Vanilla Fudge to settle the tablet versus fudge argument at home. A cup of strong tea alongside is compulsory.
Made without gelatine, so suitable for vegetarians. Contains milk.
