Every Swedish pick n mix wall has a fish on it, and this is ours. Scandi Cherry Fish are small, firm gummy fish in a deep red, with a clean sweet cherry flavour and a little sharpness from the fruit acids behind it. The chew is the thing: firmer than a British jelly, with a bit of resistance and a slow finish, the way Scandinavian gummies are meant to be.
They're set with pectin rather than gelatine, coloured with black carrot, and finished with a light glaze so they shine on the tray. That makes them one of the few fish on the wall that vegans can eat, and the texture doesn't suffer for it.
Pair them with Bubs Pomegranate for more red, or Swedish Bjornar for a soft contrast.
