Brown and cream stripes, a hard mint shell and a middle that goes chewy. Humbugs are the sweet Scrooge shares a catchphrase with, and the one every grandparent kept in a tin. Cool mint at first, then the condensed milk and butter oil in the recipe come through and the whole thing turns soft and toffee like at the end.
The stripes are coloured with plain caramel, and a little molasses gives the dark stripe its depth. That mix of mint and dairy is why a humbug tastes rounder and richer than a plain boiled mint.
They sit with Everton Mints and Black Bullets for a bag of mints in three strengths, or with Mint Toffee for the person who is really here for the chewy bit. A sweet for the car, the coat pocket and the bowl on the sideboard.
Made without gelatine, suitable for vegetarians. Contains milk.
