Fair warning: these are sour enough to make your ears ring. Nuclear Cherry Crunch starts as an extreme sour cherry chew, the kind you eat with your eyes shut, and freeze drying does nothing to calm it down. The chew becomes a crisp, puffed shell, and the sourness gets there quicker.
Freeze drying removes the water by freezing the chews and letting the ice sublimate under vacuum. What that means for a sour sweet is concentration: the acids and the cherry flavour were always there, but with the water gone they have nowhere to hide. The colour comes from anthocyanins, which are fruit pigments.
