Candy floss is mostly air, which has always felt like a bit of a swizz. Candy Floss Fudge puts the flavour into something you can get your teeth into: a soft, slightly chewy pink cube that tastes exactly like the stuff on the stick, sweet, with that unmistakable fairground note.
This is a nougat style fudge rather than a traditional one, made with icing sugar and a little gelatine instead of milk or a soya base, so it holds its shape in a warm pocket and chews rather than melts. The pink is bright and unapologetic.
Put it with Bubblegum Fudge and Birthday Cake Fudge in a kids' party box, or next to Taffy Town Cotton Candy for a full fairground bag.
