Banoffee pie was invented in 1971 by two chefs trying to improve an American toffee pie, and they got it right first go. Banoffee Fudge skips the pastry: a soft golden cube with sweet ripe banana on the first bite and a warm, rounded toffee that takes over as it melts.
The Fudge Factory make it on their soya base with no milk in the recipe, so the banana comes through clean. It's the banana of a foam sweet rather than the fruit bowl, which is exactly right.
Pair it with Caramelised Biscuit Fudge for the full pudding, or with Salted Caramel Fudge and Vanilla Fudge for a box of the golden ones.
