Starch moulding
Why jelly babies are dusty.
The story
Gummies and jellies are made by pressing shapes into a tray of dried starch, then pouring the hot liquid sweet into the impressions. The starch absorbs water as the sweets dry over several days, which is what gives them their firmness. When they come out they are dusted with the starch they were made in, which is why a jelly baby has a powdery skin and a gummy bear glazed with wax does not.
