What it is
A pale, soft, buttery toffee made with condensed milk. Chewy rather than hard, rich and simple, with nothing else going on.
Taste

Where it comes from
Toffee as we know it is a British invention of the nineteenth century, made possible by cheap sugar and, crucially, by condensed milk after its invention in the 1850s. Before that, toffee was sugar and butter alone. Condensed milk is what made it creamy and it is still the ingredient that defines a good one.
What it's made of
Sugar, glucose syrup, sweetened condensed milk and butter boiled together to the firm ball stage, poured, cooled and cut.
