Where it comes from
Black bullets are a north east of England speciality, made in the region since the nineteenth century and associated particularly with County Durham. The name comes from the shape and the colour, and they belong to the same tradition as mint humbugs, made by pulling boiled sugar until it turns opaque and striping it.
What it's made of
Sugar and glucose syrup boiled hard with menthol crystals and flavourings, then rolled into balls.
