Jelly Sandia

Sandia means watermelon in Spanish, and Jelly Sandia is a watermelon slice in soft jelly form. Red flesh, green rind, a row of little seeds if you look closely, and a sweet watermelon flavour that's more juicy than sharp. The chew is soft and a bit sticky, closer to a jelly than a bouncy gummy.

It's a simple recipe with invert sugar for a softer set, and the colours are a blend of yellow, red and blue to get the slice looking right. Nothing complicated, which is why the flavour comes through clean.

Put them with Watermelon Slices and Melon Slices for a bag that's all watermelon in different textures, or add Watermelon Millions for a bit of crunch. A summer sweet that works in December.
