You used to lick these and dip them in sherbet. Dipper Pads are that same fruity, sour dipping sweet, only freeze dried into light, crunchy pads that fizz on the tongue with no dipping required. Mixed fruit flavours, a sharp sour edge from citric and malic acid, and a texture the original never had.
The freeze drying happens cold, under vacuum, so the water leaves each pad as vapour and nothing gets cooked. The pads puff up, go brittle and taste stronger, because the water that used to dilute the flavour has gone. Rub one between your fingers and it turns to fruity dust.
