Foam Apple

Foam sweets are the quiet ones on the counter, and these deserve more attention. Foam Apples are soft, squashy green apple shapes with a light, airy texture, more marshmallow than gummy, and a fizzy sour sugar on the outside that sharpens the apple before the sweetness takes over.

The apple is the sharp green kind, closer to a Granny Smith than a dessert apple, and the fizz is gentle. Pectin alongside the gelatine keeps the foam soft rather than chewy.

They suit an apple bag with Sour Apples and Apple Rings, or Sour Apple Cubes if you want the texture contrast of foam next to a proper chew. Good on a cake, as the green stands out.

Express delivery is £5.99 for next working day delivery when you order before 2pm Monday to Friday. Orders placed after 2pm or at weekends are dispatched the next working day. The Highlands and islands can take a little longer.
