Crazy Jellybeans are the loud cousin of the classic jelly bean. A little bigger, a little glossier, with a crisp shell and a soft, chewy centre in a wider spread of colours and fruit flavours, so a handful looks like someone dropped a paint chart. The chew is soft and the flavours are bright rather than subtle.
Despite the name, the colouring is fairly sensible. The shades come from carrot, blackcurrant, spirulina and safflower, with curcumin and caramel doing the yellows and browns, and the shine comes from a beeswax and shellac glaze. No gelatine anywhere in the recipe.
They belong in a jar with the standard Jelly Beans for a side by side, with Jelly Belly Sours if you want a sharper contrast, or with Jelly Babies for a soft, easy going bag.
Made without gelatine, so suitable for vegetarians.
