What it is
A freeze dried sweet that shatters rather than chews, with a sour coating and an intense fruit flavour. Light as air and gone in seconds.

Where it comes from
Freeze drying was developed for food preservation during the Second World War, and for medicines before that. Applying it to sweets is recent, driven almost entirely by social media, where the crunch and the transformation of a familiar sweet into something puffed and alien is the entire appeal. The technique removes the water without melting the sugar, which is what makes the sweet expand.
What it's made of
A standard chew or gum is frozen and placed under vacuum, so the ice turns straight to vapour without becoming liquid. The water leaves behind a honeycomb of air, which is why the sweet expands and shatters.
