Where it comes from
Mermaids arrived in confectionery on the same wave as unicorns, driven by social media and by a broader trend for pastel and iridescent colours in food. Bubblegum is the flavour most often paired with these shapes because it reads as fun rather than fruity.
What it's made of
A two colour gum deposit set with wheat starch and modified maize and potato starches rather than gelatine, flavoured with bubblegum and coloured with black carrot juice and brilliant blue.
