Where it comes from
Aniseed has been used in confectionery and medicine for centuries, valued for digestion and for coughs. The twist shape comes from the same technique as barley sugar and humbugs, a rope of hot sugar twisted before cutting, which gives each sweet an individual pattern.
What it's made of
Sugar and glucose syrup boiled hard with aniseed oil, striped with a contrasting colour, then twisted and cut by hand or machine.
