Blue Raspberry Slices

Blue raspberry and melon is a pairing nobody asked for and everybody enjoys. Blue Raspberry Slices are soft, chewy wedge shaped jellies in a bright blue with a fine sour sugar on the outside, and the flavour lands as blue raspberry first, with a sweeter melon note underneath that stops it being one dimensional. The chew is gentle and the sour is sharp but brief.

The blue is the single colour used, so the whole slice is one shade with a paler sugar frosting on top. The tang comes from citric and malic acids in the coating. They're bigger than a lot of blue sweets, so a few go a long way in a bag.
